Bavette, or "Bottom Sirloin Flap" is part of the flank group of muscles and like the other steak cuts in this category (skirt or flank) it is great on its own, but is often seen as marinated and grilled on the BBQ. This steak has great flavour and texture and is often a favourite of butchers themselves.
Uses: Grilling, pan-frying, BBQ, marinating.
