In recent years the Coppa has become one of the most sought after pieces of the pig. It comes from the shoulder of the animal and is in essence a continuation of the Ribeye. This barrel shaped muscle is used to make Capocollo, but works fantastically cut into steaks, or roasted in the oven.
Uses: Smoking, roasting, grilling, curing.
