This cut of beef comes from the top of the shoulder blade and is held in place by thick tendons, which makes the cut both flavourful and tender. This cut can be eaten anywhere from blue to well-done and is fairly lean as well, which makes it an ideal cut for steak tartare, sliced thinly and stir-fried, or cooked like any other steak. This cut is also sometimes called the butlers' steak, feather blade steak or oyster blade steak.
Uses: Grilling, marinating, tartare, stir-frying, pan-frying.
