Jowls are almost exclusively used to make guanciale; a variety of cured and thinly sliced salumi like lardo, or prosciutto. Although fattier than cured and smoked products from the belly, the jowl makes for an excellent alternative in making bacon - the fat is much silkier and is the focus of anything made from it.
