Another one of those cuts that we don't see much of because its strong in flavour. Pork kidneys are most often sautéed in a bit of pork suet with some garlic and fresh herbs. It is also recommended that they be soaked in milk overnight to draw out some of those stronger flavours.
Uses: Pan frying, sausage, pies, pâté, raw dog food.
