Another one of those cuts that we don't see much of because it is strong in flavor. Lamb kidneys are most often sautéed in a bit of lamb fat with some garlic and fresh herbs and deglazed with red wine. It is also recommended that they be soaked in milk overnight to draw out some of those stronger flavors.
Uses: Pan-frying, sausage, pies, pâté, raw dog food.
