Osso Bucco, or beef shank, is the cross cut front or hind leg of a cow, which is done to expose the marrow of the bone. This cut is almost exclusively used in braising, to allow the tough leg muscles, and rich bone marrow to breakdown slowly in liquid and makes for a tender and rich dish.
