Picanha, AKA "Top Sirloin Cap" is a favourite amongst the strong beef and charcoal BBQ cultures of Brazil and Portugal. This cut is triangular in shape and surrounded by a thick layer of fat, know as the fat cap. This is not an overused muscle, so it remains beautifully tender and juicy, producing an amazing flavour when cooked. This cut can be done like individual steaks, which we cut to 170g (6oz), or as a whole piece, which averages 800g (28oz).
Uses: Smoking, roasting, grilling, curing.
