A delicacy of French country provision making, and a must for summer picnics or on a winter charcuterie board. Our rillettes are made by massaging fresh herbs, warm spices and white wine into pork shoulder. After three days in the seasoning the shoulder is confit and whipped with the cooking liquid and topped with the flavourful lard to seal the jars.
*Pull the rillette out of the fridge and let rest at room temperature for at least 30 minutes before serving on slices of warm crusty baguette.
