Lamb ribs are fatty and flavourful and require a slow cook, but are also well worth the time and effort. We recommend a slow smoke or roast at 120 C (250 F) for at least two hours and then glazed with a sweet and sticky sauce every 10 minutes at 175 C (350 F) for an additional hour.
