The king of all beef cuts is the tenderloin, aka the fillet. This cut is the small side of the T-bone and because it is surrounded by bone and doesn't do much work, it is as tender as it gets. The center cut of the tenderloin is what's used to made beef wellington and because of this muscles extreme tenderness is often used to make steak tartare as well.
Steaks are cut to 170g (6oz).
